Healthy Banana Muffins

I like to add as much healthy ‘umph’ to my recipes as possible so I made a few tweaks to the Better Homes and Gardens recipe and it has turned out well every time.  It’s my go to recipe for using up over-ripe bananas before they are unsalvageable.

Healthy Banana Muffins  recipe adapted from BHG Banana Bread

  • 1 C unflavored protein powder
  • 1 C whole wheat flour
  • 1-1/2 t baking powder
  • 1/2 t baking soda
  • 1/4 t ground cinnamon
  • 1/8 t ground nutmeg
  • 6 T egg whites
  • 4-6 medium bananas
  • 1/2 – 2/3 C organic cane sugar
  • 1/2 C unsweetened applesauce
  • 1 handful chopped nuts
  • splash of almond milk

Combine all ingredients until well mixed.  Apply non-stick spray to a muffin tin or muffin liners in the tin.  Portion batter into muffin tin (or liners).  Bake at 350*F for 25-35 minutes or until done.

This recipe makes about 16 muffins.
